- Zucchini - 150 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely diced
- Shallot - 1 medium, finely chopped
- Dulse seaweed - 10 grams, rehydrated and chopped
- Chickpea flour - 100 grams
- Water - 150 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh dill - 1 tablespoon, chopped
Steps
- In a mixing bowl, combine the grated zucchini, grated carrot, diced red bell pepper, chopped shallot, and rehydrated dulse seaweed.
- Add the chickpea flour, water, olive oil, salt, black pepper, and chopped dill to the vegetable mixture. Stir until well combined to form a batter.
- Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Pour half of the batter into the skillet, spreading it evenly to form a galette approximately 1 cm thick.
- Cook for about 5-7 minutes on one side, until golden brown, then carefully flip and cook for another 5-7 minutes until both sides are crispy.
- Repeat with the remaining batter to make the second galette.
- Serve hot, garnished with fresh dill and a drizzle of olive oil if desired.
