  • buckwheat flour - 100 grams
  • water - 300 milliliters
  • salt - 1/2 teaspoon
  • olive oil - 1 tablespoon
  • spinach - 100 grams, chopped
  • mushrooms - 100 grams, sliced
  • red bell pepper - 1 medium, diced
  • onion - 1 small, finely chopped
  • garlic - 1 clove, minced
  • nutritional yeast - 2 tablespoons
  • fresh parsley - 2 tablespoons, chopped
  • black pepper - to taste

Steps

  1. In a mixing bowl, combine buckwheat flour and salt. Gradually whisk in water until smooth. Let the batter rest for 15 minutes.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
  3. Add sliced mushrooms, diced red bell pepper, and chopped spinach to the skillet. Cook for about 5-7 minutes until vegetables are tender.
  4. Stir in nutritional yeast, fresh parsley, and black pepper. Remove from heat and set aside.
  5. Heat a non-stick skillet over medium heat. Pour a ladleful of batter into the skillet, swirling to cover the bottom evenly. Cook for about 2-3 minutes until the edges lift.
  6. Flip the galette and add a portion of the vegetable mixture to one half. Fold the other half over the filling and cook for an additional 2 minutes.
  7. Repeat with the remaining batter and filling. Serve warm, garnished with extra parsley if desired.
