- buckwheat flour - 100 grams
- water - 300 milliliters
- salt - 1/2 teaspoon
- olive oil - 1 tablespoon
- spinach - 100 grams, chopped
- mushrooms - 100 grams, sliced
- red bell pepper - 1 medium, diced
- onion - 1 small, finely chopped
- garlic - 1 clove, minced
- nutritional yeast - 2 tablespoons
- fresh parsley - 2 tablespoons, chopped
- black pepper - to taste
Steps
- In a mixing bowl, combine buckwheat flour and salt. Gradually whisk in water until smooth. Let the batter rest for 15 minutes.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
- Add sliced mushrooms, diced red bell pepper, and chopped spinach to the skillet. Cook for about 5-7 minutes until vegetables are tender.
- Stir in nutritional yeast, fresh parsley, and black pepper. Remove from heat and set aside.
- Heat a non-stick skillet over medium heat. Pour a ladleful of batter into the skillet, swirling to cover the bottom evenly. Cook for about 2-3 minutes until the edges lift.
- Flip the galette and add a portion of the vegetable mixture to one half. Fold the other half over the filling and cook for an additional 2 minutes.
- Repeat with the remaining batter and filling. Serve warm, garnished with extra parsley if desired.
