  • Almond meal - 30 grams
  • Baking powder - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - a pinch
  • Powdered sugar - for dusting (optional)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small loaf pan.
  2. In a mixing bowl, whisk the eggs and granulated sugar together until pale and fluffy.
  3. Add the melted butter, lemon zest, and lemon juice to the egg mixture, stirring until well combined.
  4. In a separate bowl, mix the all-purpose flour, almond meal, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
