Steps
- Preheat the oven to 180°C (350°F) and grease a small loaf pan.
- In a mixing bowl, whisk the eggs and granulated sugar together until pale and fluffy.
- Add the melted butter, lemon zest, and lemon juice to the egg mixture, stirring until well combined.
- In a separate bowl, mix the all-purpose flour, almond meal, baking powder, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
