  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 30 grams (optional)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake pan.
  2. In a large mixing bowl, whisk the eggs, honey, melted coconut oil, and vanilla extract until well combined.
  3. Add the grated carrots to the wet mixture and stir until evenly distributed.
  4. In a separate bowl, combine the almond flour, oat flour, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped walnuts if using.
