- Coconut oil - 60 grams (melted)
- Maple syrup - 70 grams
- Almond milk - 100 ml
- Vanilla extract - 1 teaspoon
- Ground flaxseed - 1 tablespoon
- Water - 2.5 tablespoons
- Almond butter - 50 grams
- Powdered sugar - 20 grams
Steps
- Preheat your oven to 180°C (350°F) and grease a small round cake pan.
- In a bowl, mix the all-purpose flour, almond flour, baking powder, and salt together until well combined.
- In another bowl, whisk together the melted coconut oil, maple syrup, almond milk, vanilla extract, ground flaxseed mixed with water, and set aside for 5 minutes to thicken.
- Combine the wet ingredients with the dry ingredients and mix until a dough forms. Divide the dough into two equal parts.
- Press one half of the dough into the bottom of the prepared cake pan, ensuring it covers the base evenly.
- In a separate bowl, mix the almond butter and powdered sugar until smooth to create the filling.
- Spread the almond butter mixture evenly over the dough in the pan.
- Roll out the second half of the dough to cover the filling and seal the edges by pressing down gently.
- Make a few slits on the top crust to allow steam to escape.
- Bake in the preheated oven for 30-35 minutes or until golden brown.
- Allow to cool for at least 15 minutes before slicing and serving.
