Ingredients

  • Almond flour - 100 grams
  • All-purpose flour - 50 grams
  • Coconut oil - 60 grams, melted
  • Maple syrup - 50 grams
  • Almond milk - 75 ml
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 20 grams
  • Sugar - 50 grams
  • Plant-based milk (for pastry cream) - 200 ml
  • Lemon zest - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine almond flour, all-purpose flour, baking powder, and a pinch of salt.
  3. In another bowl, whisk together melted coconut oil, maple syrup, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Divide the dough in half and flatten each half into disks. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. While the dough is chilling, prepare the pastry cream: In a saucepan, heat the plant-based milk over medium heat.
  7. In a separate bowl, whisk together cornstarch, sugar, and lemon zest until well combined.
  8. Once the milk is warm, gradually whisk in the cornstarch mixture, stirring continuously until the mixture thickens.
  9. Remove from heat and let it cool slightly.
  10. Roll out one disk of dough on a floured surface to fit the bottom of a small round tart pan.
  11. Place the rolled dough in the tart pan and pour the pastry cream over the crust.
  12. Roll out the second disk of dough and place it over the pastry cream, sealing the edges.
  13. Make a few slits in the top to allow steam to escape.
  14. Bake in the preheated oven for 25-30 minutes or until golden brown.
  15. Allow to cool for 10 minutes before serving.
