- All-purpose flour - 50 grams
- Coconut oil - 60 grams, melted
- Maple syrup - 50 grams
- Almond milk - 75 ml
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Cornstarch - 20 grams
- Sugar - 50 grams
- Plant-based milk (for pastry cream) - 200 ml
- Lemon zest - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine almond flour, all-purpose flour, baking powder, and a pinch of salt.
- In another bowl, whisk together melted coconut oil, maple syrup, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Divide the dough in half and flatten each half into disks. Wrap in plastic wrap and refrigerate for 30 minutes.
- While the dough is chilling, prepare the pastry cream: In a saucepan, heat the plant-based milk over medium heat.
- In a separate bowl, whisk together cornstarch, sugar, and lemon zest until well combined.
- Once the milk is warm, gradually whisk in the cornstarch mixture, stirring continuously until the mixture thickens.
- Remove from heat and let it cool slightly.
- Roll out one disk of dough on a floured surface to fit the bottom of a small round tart pan.
- Place the rolled dough in the tart pan and pour the pastry cream over the crust.
- Roll out the second disk of dough and place it over the pastry cream, sealing the edges.
- Make a few slits in the top to allow steam to escape.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow to cool for 10 minutes before serving.
