Ingredients

  • All-purpose flour - 150 grams
  • Ground almonds - 50 grams
  • Granulated sugar - 100 grams
  • Unsalted butter - 75 grams, softened
  • Eggs - 1 large
  • Baking powder - 5 grams
  • Vanilla extract - 1 teaspoon
  • Milk - 150 milliliters
  • Cornstarch - 15 grams
  • Salt - a pinch
  • Lemon zest - from 1 lemon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the flour, ground almonds, baking powder, and a pinch of salt.
  3. In another bowl, beat the softened butter and sugar until creamy, then add the egg and vanilla extract, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, combining until a soft dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  6. While the dough is chilling, prepare the pastry cream by heating the milk in a saucepan until just boiling.
  7. In a separate bowl, whisk together the cornstarch, sugar, and lemon zest.
  8. Once the milk is hot, slowly pour it into the cornstarch mixture while whisking continuously to prevent lumps.
  9. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens. Remove from heat and let it cool.
  10. Grease a small round baking dish (about 15 cm in diameter) and divide the dough in two, rolling out each half to fit the dish.
  11. Place one layer of dough in the bottom of the dish, add the cooled pastry cream, then cover with the second layer of dough.
  12. Bake in the preheated oven for 25-30 minutes or until golden brown.
  13. Allow the gâteau to cool slightly before serving.
