- All-purpose flour - 150 grams
- Ground almonds - 50 grams
- Granulated sugar - 100 grams
- Unsalted butter - 75 grams, softened
- Eggs - 1 large
- Baking powder - 5 grams
- Vanilla extract - 1 teaspoon
- Milk - 150 milliliters
- Cornstarch - 15 grams
- Salt - a pinch
- Lemon zest - from 1 lemon
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the flour, ground almonds, baking powder, and a pinch of salt.
- In another bowl, beat the softened butter and sugar until creamy, then add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, combining until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- While the dough is chilling, prepare the pastry cream by heating the milk in a saucepan until just boiling.
- In a separate bowl, whisk together the cornstarch, sugar, and lemon zest.
- Once the milk is hot, slowly pour it into the cornstarch mixture while whisking continuously to prevent lumps.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens. Remove from heat and let it cool.
- Grease a small round baking dish (about 15 cm in diameter) and divide the dough in two, rolling out each half to fit the dish.
- Place one layer of dough in the bottom of the dish, add the cooled pastry cream, then cover with the second layer of dough.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow the gâteau to cool slightly before serving.
