- Red bell pepper - 50 grams, diced
- Fresh basil - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
- Heat olive oil in an oven-safe skillet over medium heat, then add the diced zucchini and red bell pepper. Sauté for about 5 minutes until they start to soften.
- Add the halved cherry tomatoes and chopped basil to the skillet, cooking for an additional 2 minutes.
- Pour the whisked eggs evenly over the sautéed vegetables in the skillet, gently stirring to distribute the ingredients.
- Sprinkle the crumbled goat cheese on top of the egg mixture.
