  • Zucchini - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Fresh basil - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium bowl, whisk together the eggs, salt, and black pepper until well combined.
  3. Heat olive oil in an oven-safe skillet over medium heat, then add the diced zucchini and red bell pepper. Sauté for about 5 minutes until they start to soften.
  4. Add the halved cherry tomatoes and chopped basil to the skillet, cooking for an additional 2 minutes.
  5. Pour the whisked eggs evenly over the sautéed vegetables in the skillet, gently stirring to distribute the ingredients.
  6. Sprinkle the crumbled goat cheese on top of the egg mixture.
