- Chicken thighs, boneless - 400 grams
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Shallots, finely chopped - 2
- Garlic, minced - 2 cloves
- Mushrooms, sliced - 200 grams
- Carrot, diced - 1 medium
- Chicken stock - 250 milliliters
- Heavy cream - 100 milliliters
- Fresh thyme - 1 teaspoon
- Fresh parsley, chopped - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil and butter in a large skillet over medium heat.
- Add the chopped shallots and garlic, sautéing until translucent.
- Season the chicken thighs with salt and pepper, then add to the skillet, browning on both sides for about 5-7 minutes.
- Remove the chicken and set aside. In the same skillet, add the sliced mushrooms and diced carrot, cooking until softened.
- Return the chicken to the skillet, pour in the chicken stock, and add thyme. Bring to a simmer and cover, cooking for 15 minutes.
- Remove the lid, stir in the heavy cream, and simmer for an additional 5 minutes.
- Adjust seasoning to taste, then sprinkle with fresh parsley before serving.
