  • Chicken thighs, boneless - 400 grams
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Shallots, finely chopped - 2
  • Garlic, minced - 2 cloves
  • Mushrooms, sliced - 200 grams
  • Carrot, diced - 1 medium
  • Chicken stock - 250 milliliters
  • Heavy cream - 100 milliliters
  • Fresh thyme - 1 teaspoon
  • Fresh parsley, chopped - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add the chopped shallots and garlic, sautéing until translucent.
  3. Season the chicken thighs with salt and pepper, then add to the skillet, browning on both sides for about 5-7 minutes.
  4. Remove the chicken and set aside. In the same skillet, add the sliced mushrooms and diced carrot, cooking until softened.
  5. Return the chicken to the skillet, pour in the chicken stock, and add thyme. Bring to a simmer and cover, cooking for 15 minutes.
  6. Remove the lid, stir in the heavy cream, and simmer for an additional 5 minutes.
  7. Adjust seasoning to taste, then sprinkle with fresh parsley before serving.
