- White fish fillets (such as cod or haddock) - 300 grams

- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1, diced
- Celery - 1 stalk, diced
- Mushrooms - 100 grams, sliced
- Vegetable broth - 250 ml
- Heavy cream - 100 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet over medium heat. Add the shallots and garlic, and sauté until translucent, about 2-3 minutes.
- Add the diced carrot and celery to the skillet, cooking for another 5 minutes until softened.
- Stir in the sliced mushrooms and cook for an additional 3-4 minutes until they release their moisture.
- Pour in the vegetable broth and bring to a simmer. Let it cook for 5 minutes to meld the flavors.
- Season the fish fillets with salt and black pepper, then gently place them in the skillet. Cover and simmer for about 8-10 minutes, or until the fish is cooked through and flakes easily.
- Reduce the heat to low and stir in the heavy cream, lemon juice, and chopped parsley. Cook for another 2-3 minutes to heat through, adjusting seasoning if necessary.
- Serve the fricassée hot, garnished with additional parsley if desired.
