  • Carrot - 1, diced
  • Celery - 1 stalk, diced
  • Mushrooms - 100 grams, sliced
  • Vegetable broth - 250 ml
  • Heavy cream - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the shallots and garlic, and sauté until translucent, about 2-3 minutes.
  2. Add the diced carrot and celery to the skillet, cooking for another 5 minutes until softened.
  3. Stir in the sliced mushrooms and cook for an additional 3-4 minutes until they release their moisture.
  4. Pour in the vegetable broth and bring to a simmer. Let it cook for 5 minutes to meld the flavors.
  5. Season the fish fillets with salt and black pepper, then gently place them in the skillet. Cover and simmer for about 8-10 minutes, or until the fish is cooked through and flakes easily.
  6. Reduce the heat to low and stir in the heavy cream, lemon juice, and chopped parsley. Cook for another 2-3 minutes to heat through, adjusting seasoning if necessary.
  7. Serve the fricassée hot, garnished with additional parsley if desired.
