- Mushrooms - 150 grams, sliced
- Green beans - 100 grams, trimmed and halved
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 ml
- Soy sauce - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in the sliced carrots and green beans, and cook for 5 minutes, stirring occasionally.
- Add the diced zucchini, bell pepper, and mushrooms to the skillet. Cook for another 5 minutes until the vegetables start to soften.
- Pour in the vegetable broth and soy sauce, then add thyme, bay leaf, salt, and black pepper. Bring to a simmer.
- Cover the skillet and let it simmer for about 10-15 minutes until all vegetables are tender.
- Remove the bay leaf, taste, and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
