  • Mushrooms - 150 grams, sliced
  • Green beans - 100 grams, trimmed and halved
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 ml
  • Soy sauce - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the sliced carrots and green beans, and cook for 5 minutes, stirring occasionally.
  4. Add the diced zucchini, bell pepper, and mushrooms to the skillet. Cook for another 5 minutes until the vegetables start to soften.
  5. Pour in the vegetable broth and soy sauce, then add thyme, bay leaf, salt, and black pepper. Bring to a simmer.
  6. Cover the skillet and let it simmer for about 10-15 minutes until all vegetables are tender.
  7. Remove the bay leaf, taste, and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
