Ingredients

  • Lobster tails - 2 (about 300g each)
  • Butter - 50g
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Mushrooms - 150g, sliced
  • Heavy cream - 200ml
  • Chicken broth - 100ml
  • Fresh tarragon - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Begin by bringing a pot of salted water to boil. Add the lobster tails and cook for about 6-8 minutes until they are bright red and cooked through. Remove and let cool slightly before removing the meat from the shells. Cut the lobster meat into bite-sized pieces.
  2. In a large skillet, melt the butter over medium heat. Add the shallots and garlic, cooking until softened, about 2-3 minutes.
  3. Add the sliced mushrooms to the skillet and sauté until they are golden and tender, around 5 minutes.
  4. Pour in the chicken broth and bring to a simmer, allowing it to reduce slightly for about 4-5 minutes.
  5. Stir in the heavy cream and cook for another 3-4 minutes until the sauce thickens slightly.
  6. Add the lobster meat to the skillet, along with the tarragon, parsley, lemon juice, salt, and pepper. Cook for an additional 2-3 minutes until the lobster is heated through.
  7. Serve hot, garnished with extra herbs if desired.
