- Zucchini (sliced thin) - 1 medium
- Mushrooms (sliced) - 100 grams
- Coconut milk - 200 ml
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the coconut oil in a large skillet over medium heat.
- Add the shallots and garlic, sautéing until translucent, about 2-3 minutes.
- Stir in the sliced carrot and zucchini, cooking for another 5 minutes until they start to soften.
- Add the mushrooms and cook for an additional 3-4 minutes until they are tender.
- Increase the heat to medium-high and add the scallops and shrimp, cooking for 3-4 minutes until they turn opaque.
- Pour in the coconut milk, stirring to combine, and let it simmer for 5 minutes to thicken slightly.
- Add lemon juice, salt, and black pepper to taste.
- Garnish with chopped parsley before serving.
