  • Shallots (finely chopped) - 2 medium
  • Garlic (minced) - 2 cloves
  • Carrot (sliced thin) - 1 medium
  • Zucchini (sliced thin) - 1 medium
  • Mushrooms (sliced) - 100 grams
  • Coconut milk - 200 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the shallots and garlic, sautéing until translucent, about 2-3 minutes.
  3. Stir in the sliced carrot and zucchini, cooking for another 5 minutes until they start to soften.
  4. Add the mushrooms and cook for an additional 3-4 minutes until they are tender.
  5. Increase the heat to medium-high and add the scallops and shrimp, cooking for 3-4 minutes until they turn opaque.
  6. Pour in the coconut milk, stirring to combine, and let it simmer for 5 minutes to thicken slightly.
  7. Add lemon juice, salt, and black pepper to taste.
  8. Garnish with chopped parsley before serving.
