Ingredients

  • Fresh mushrooms (button and cremini) - 300 grams, sliced
  • Olive oil - 2 tablespoons
  • Unsalted butter - 20 grams
  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • White wine - 100 ml
  • Vegetable broth - 150 ml
  • Heavy cream - 100 ml
  • Fresh thyme - 2 sprigs
  • Salt - to taste
  • Black pepper - to taste
  • Flat-leaf parsley - 1 tablespoon, chopped for garnish

Steps

  1. Heat the olive oil and butter in a large skillet over medium heat until melted.
  2. Add the chopped shallot and sauté for about 2-3 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are browned and have released their moisture.
  5. Pour in the white wine and let it simmer for about 3-4 minutes, allowing the alcohol to evaporate.
  6. Add the vegetable broth and thyme sprigs, stirring to combine. Bring to a gentle simmer and cook for another 5 minutes.
  7. Reduce the heat to low and stir in the heavy cream, allowing the sauce to thicken slightly. Season with salt and black pepper to taste.
  8. Remove the thyme sprigs and serve the fricassée hot, garnished with chopped parsley.
