Ingredients

  • Almond flour - 50 grams
  • All-purpose flour - 25 grams
  • Granulated sugar - 75 grams
  • Baking powder - 1 teaspoon
  • Eggs - 2 large eggs
  • Unsalted butter - 30 grams, melted
  • Vanilla extract - 1 teaspoon
  • Fresh strawberries - 200 grams, hulled and sliced
  • Heavy cream - 100 ml
  • Powdered sugar - 15 grams
  • Gelatin powder - 1 teaspoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F). Line a small baking dish (20 cm) with parchment paper.
  2. In a bowl, mix almond flour, all-purpose flour, baking powder, and half of the granulated sugar.
  3. In another bowl, whisk the eggs and remaining sugar until the mixture is pale and fluffy.
  4. Fold the flour mixture into the egg mixture gently, then add melted butter and vanilla extract. Mix until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 20-25 minutes or until golden and a toothpick comes out clean. Let it cool.
  6. In a small bowl, dissolve gelatin in water and let it sit for 5 minutes. Then, warm it gently until fully dissolved.
  7. In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Gradually add the dissolved gelatin while continuing to whip until stiff peaks form.
  8. Once the cake is cool, slice it in half horizontally to create two layers.
  9. Place one layer back into the baking dish. Spread a layer of whipped cream on top, then arrange half of the sliced strawberries over it.
  10. Place the second cake layer on top and press down gently. Add the remaining whipped cream on top and decorate with the rest of the strawberries.
  11. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
