- Almond flour - 50 grams
- All-purpose flour - 25 grams
- Granulated sugar - 75 grams
- Baking powder - 1 teaspoon
- Eggs - 2 large eggs
- Unsalted butter - 30 grams, melted
- Vanilla extract - 1 teaspoon
- Fresh strawberries - 200 grams, hulled and sliced
- Heavy cream - 100 ml
- Powdered sugar - 15 grams
- Gelatin powder - 1 teaspoon
- Water - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F). Line a small baking dish (20 cm) with parchment paper.
- In a bowl, mix almond flour, all-purpose flour, baking powder, and half of the granulated sugar.
- In another bowl, whisk the eggs and remaining sugar until the mixture is pale and fluffy.
- Fold the flour mixture into the egg mixture gently, then add melted butter and vanilla extract. Mix until just combined.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 20-25 minutes or until golden and a toothpick comes out clean. Let it cool.
- In a small bowl, dissolve gelatin in water and let it sit for 5 minutes. Then, warm it gently until fully dissolved.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form. Gradually add the dissolved gelatin while continuing to whip until stiff peaks form.
- Once the cake is cool, slice it in half horizontally to create two layers.
- Place one layer back into the baking dish. Spread a layer of whipped cream on top, then arrange half of the sliced strawberries over it.
- Place the second cake layer on top and press down gently. Add the remaining whipped cream on top and decorate with the rest of the strawberries.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
