Ingredients

  • all-purpose flour - 250 grams
  • active dry yeast - 7 grams
  • warm water - 150 ml
  • olive oil - 30 ml
  • sea salt - 5 grams
  • black olives, pitted and chopped - 50 grams
  • fresh rosemary, chopped - 1 tablespoon
  • garlic, minced - 1 clove
  • black pepper - to taste

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine the all-purpose flour and sea salt, then make a well in the center.
  3. Pour the yeast mixture and olive oil into the well, and mix with a wooden spoon until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  6. Once risen, punch down the dough and knead in the chopped olives, rosemary, minced garlic, and black pepper.
  7. Shape the dough into a flat oval or rectangle about 1 cm thick and place it on a baking sheet lined with parchment paper.
  8. Using a sharp knife, make several diagonal cuts across the surface of the dough to create a decorative pattern.
  9. Cover the shaped dough with a cloth and let it rise for another 15-20 minutes.
  10. Preheat the oven to 220°C (428°F).
  11. Bake the fougasse for 15-20 minutes or until golden brown and hollow-sounding when tapped on the bottom.
  12. Allow to cool slightly before slicing and serving warm.
