- all-purpose flour - 250 grams
- active dry yeast - 7 grams
- warm water - 150 ml
- olive oil - 30 ml
- sea salt - 5 grams
- black olives, pitted and chopped - 50 grams
- fresh rosemary, chopped - 1 tablespoon
- garlic, minced - 1 clove
- black pepper - to taste
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the all-purpose flour and sea salt, then make a well in the center.
- Pour the yeast mixture and olive oil into the well, and mix with a wooden spoon until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Once risen, punch down the dough and knead in the chopped olives, rosemary, minced garlic, and black pepper.
- Shape the dough into a flat oval or rectangle about 1 cm thick and place it on a baking sheet lined with parchment paper.
- Using a sharp knife, make several diagonal cuts across the surface of the dough to create a decorative pattern.
- Cover the shaped dough with a cloth and let it rise for another 15-20 minutes.
- Preheat the oven to 220°C (428°F).
- Bake the fougasse for 15-20 minutes or until golden brown and hollow-sounding when tapped on the bottom.
- Allow to cool slightly before slicing and serving warm.
