Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 50 ml
  • Salt - 5 grams
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Black olives - 50 grams, pitted and chopped
  • Coarse sea salt - for sprinkling

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center, and add the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms. Add the chopped rosemary, thyme, and black olives, and knead the dough for about 10 minutes until smooth and elastic.
  4. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Once risen, punch down the dough and transfer it to a floured surface. Roll it out into a rectangular shape, about 1 cm thick.
  7. Using a sharp knife or dough scraper, make cuts in the dough to create a leaf pattern. Be careful not to cut all the way through.
  8. Transfer the shaped fougasse onto a parchment-lined baking sheet. Drizzle with olive oil and sprinkle coarse sea salt on top.
  9. Let the dough rest for another 10-15 minutes, then bake in the preheated oven for 15-20 minutes, or until golden brown.
  10. Remove from the oven, let it cool slightly, then slice and serve warm.
