- all-purpose flour - 250 grams
- active dry yeast - 7 grams
- warm water - 150 milliliters
- olive oil - 30 milliliters
- sea salt - 5 grams
- black olives (pitted and chopped) - 100 grams
- fresh rosemary (chopped) - 1 tablespoon
- honey - 5 grams
Steps
- In a small bowl, mix the warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour and sea salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Once risen, punch down the dough and knead in the chopped olives and rosemary until evenly distributed.
- Shape the dough into a flat oval about 1 cm thick and place on a baking sheet lined with parchment paper.
- Using a sharp knife, make cuts in the dough to create a leaf pattern, being careful not to cut all the way through.
- Cover the dough again with a cloth and let it rise for another 15-20 minutes.
- Preheat the oven to 220°C (425°F).
- Bake the fougasse for about 20-25 minutes until golden brown and crisp on the outside.
- Remove from the oven and let cool slightly before serving.
