Ingredients

  • all-purpose flour - 250 grams
  • active dry yeast - 7 grams
  • warm water - 150 milliliters
  • olive oil - 30 milliliters
  • sea salt - 5 grams
  • black olives (pitted and chopped) - 100 grams
  • fresh rosemary (chopped) - 1 tablespoon
  • honey - 5 grams

Steps

  1. In a small bowl, mix the warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and sea salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Once risen, punch down the dough and knead in the chopped olives and rosemary until evenly distributed.
  6. Shape the dough into a flat oval about 1 cm thick and place on a baking sheet lined with parchment paper.
  7. Using a sharp knife, make cuts in the dough to create a leaf pattern, being careful not to cut all the way through.
  8. Cover the dough again with a cloth and let it rise for another 15-20 minutes.
  9. Preheat the oven to 220°C (425°F).
  10. Bake the fougasse for about 20-25 minutes until golden brown and crisp on the outside.
  11. Remove from the oven and let cool slightly before serving.
