- all-purpose flour - 250 grams
- warm water - 150 milliliters
- active dry yeast - 7 grams
- sea salt - 5 grams
- extra virgin olive oil - 30 milliliters
- green olives, pitted and chopped - 100 grams
- fresh rosemary, chopped - 1 tablespoon
- black pepper - to taste
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and sea salt. Mix well.
- Make a well in the center of the flour mixture and pour in the yeast mixture and olive oil. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
- Once risen, punch down the dough and incorporate the chopped olives and rosemary. Knead gently to distribute evenly.
- Preheat the oven to 220°C (425°F).
- Shape the dough into a flat oval, about 1.5 cm thick, and place it on a baking sheet lined with parchment paper.
- Using a sharp knife, make several diagonal slashes on the surface of the dough to create a decorative pattern.
- Let the dough rest for another 10 minutes before baking.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and baked through.
- Remove from the oven, let cool slightly, then slice and serve warm.
