- Active dry yeast - 5 grams
- Salt - 1 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Fresh basil - 1 tablespoon, chopped
- Black pepper - 1/4 teaspoon
Steps
- In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Once risen, punch down the dough and knead in the chopped herbs and black pepper.
- Preheat the oven to 220°C (425°F).
- Shape the dough into a flat oval or rectangle, about 1-2 cm thick, and place it on a baking sheet lined with parchment paper.
- Using a sharp knife, make several diagonal cuts across the surface of the dough to create a leaf pattern.
- Let the dough rest for another 10 minutes before baking.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and cooked through.
- Allow to cool slightly before slicing and serving.
