- Almond milk - 400 ml
- Cornstarch - 50 g
- Maple syrup - 60 ml
- Vanilla extract - 1 tsp
- Ground cinnamon - 1/2 tsp
- Nutmeg - a pinch
- Lemon juice - 1 tbsp
- Coconut oil (for greasing) - as needed
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, combine almond milk, cornstarch, maple syrup, vanilla extract, ground cinnamon, nutmeg, and lemon juice.
- Whisk the mixture thoroughly over medium heat until it thickens, which should take about 5-7 minutes.
- Once thickened, remove from heat and let it cool slightly.
- Grease two small ramekins with coconut oil.
- Pour the flan mixture evenly into the ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 25-30 minutes, or until the flans are set.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
- To serve, gently run a knife around the edge of the ramekin and invert onto a plate.
