Ingredients

  • Almond milk - 400 ml
  • Cornstarch - 50 g
  • Maple syrup - 60 ml
  • Vanilla extract - 1 tsp
  • Ground cinnamon - 1/2 tsp
  • Nutmeg - a pinch
  • Lemon juice - 1 tbsp
  • Coconut oil (for greasing) - as needed

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium saucepan, combine almond milk, cornstarch, maple syrup, vanilla extract, ground cinnamon, nutmeg, and lemon juice.
  3. Whisk the mixture thoroughly over medium heat until it thickens, which should take about 5-7 minutes.
  4. Once thickened, remove from heat and let it cool slightly.
  5. Grease two small ramekins with coconut oil.
  6. Pour the flan mixture evenly into the ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake in the preheated oven for 25-30 minutes, or until the flans are set.
  9. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
  10. To serve, gently run a knife around the edge of the ramekin and invert onto a plate.
