Ingredients

  • Shortcrust pastry - 150 grams
  • Milk - 300 milliliters
  • Heavy cream - 100 milliliters
  • Granulated sugar - 100 grams
  • Cornstarch - 30 grams
  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line a 20 cm (8 inch) tart pan with it, making sure to cover the edges. Prick the base with a fork and chill in the fridge for 15 minutes.
  3. In a saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until just simmering, then remove from heat.
  4. In a bowl, whisk together the remaining sugar, cornstarch, eggs, vanilla extract, and salt until smooth.
  5. Slowly pour the hot milk mixture into the egg mixture, whisking continuously to temper the eggs.
  6. Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens (about 5 minutes).
  7. Pour the custard into the prepared pastry shell, smoothing the top.
  8. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  9. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
  10. Slice and serve chilled, optionally dusted with powdered sugar or accompanied by fresh fruit.
