- Shortcrust pastry - 150 grams
- Milk - 300 milliliters
- Heavy cream - 100 milliliters
- Granulated sugar - 100 grams
- Cornstarch - 30 grams
- Eggs - 2 large
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- Roll out the shortcrust pastry and line a 20 cm (8 inch) tart pan with it, making sure to cover the edges. Prick the base with a fork and chill in the fridge for 15 minutes.
- In a saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until just simmering, then remove from heat.
- In a bowl, whisk together the remaining sugar, cornstarch, eggs, vanilla extract, and salt until smooth.
- Slowly pour the hot milk mixture into the egg mixture, whisking continuously to temper the eggs.
- Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens (about 5 minutes).
- Pour the custard into the prepared pastry shell, smoothing the top.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving.
- Slice and serve chilled, optionally dusted with powdered sugar or accompanied by fresh fruit.
