Ingredients
- Coconut milk - 200 ml
- Eggs - 2 large
- Honey - 30 ml
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Desiccated coconut - 2 tbsp
- Pinch of salt - to taste
Steps
- Preheat your oven to 160°C (320°F).
- In a mixing bowl, whisk together the eggs, honey, and vanilla extract until well combined.
- In a saucepan, heat the coconut milk over medium heat until warm but not boiling.
- Gradually add the warm coconut milk to the egg mixture, whisking continuously to avoid curdling.
- In a separate bowl, mix the cornstarch and desiccated coconut, then add to the egg mixture, stirring well.
- Add a pinch of salt and mix until smooth.
- Pour the mixture into two ramekins and place them in a baking dish filled with hot water (bain-marie).
- Bake in the preheated oven for about 30-35 minutes, or until set.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
- Serve chilled, optionally garnishing with additional desiccated coconut.
