Ingredients

  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Honey - 30 ml
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Desiccated coconut - 2 tbsp
  • Pinch of salt - to taste

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a mixing bowl, whisk together the eggs, honey, and vanilla extract until well combined.
  3. In a saucepan, heat the coconut milk over medium heat until warm but not boiling.
  4. Gradually add the warm coconut milk to the egg mixture, whisking continuously to avoid curdling.
  5. In a separate bowl, mix the cornstarch and desiccated coconut, then add to the egg mixture, stirring well.
  6. Add a pinch of salt and mix until smooth.
  7. Pour the mixture into two ramekins and place them in a baking dish filled with hot water (bain-marie).
  8. Bake in the preheated oven for about 30-35 minutes, or until set.
  9. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
  10. Serve chilled, optionally garnishing with additional desiccated coconut.
