- Olive oil - 1 tablespoon

- Crème fraîche - 100 grams
- Goat cheese - 100 grams, crumbled
- Onion - 1 medium, thinly sliced
- Zucchini - 1 small, thinly sliced
- Bell pepper - 1 small, thinly sliced
- Thyme - 1 teaspoon, fresh or dried
- Black pepper - to taste
Steps
- Preheat your oven to 250°C (482°F).
- In a mixing bowl, combine the flour, water, olive oil, and salt to form a smooth dough. Knead for a few minutes until elastic, then let it rest for 10 minutes.
- Roll out the dough on a lightly floured surface into a thin rectangle or circle, about 3 mm thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Spread the crème fraîche evenly over the surface of the dough, leaving a small border around the edges.
- Sprinkle the crumbled goat cheese evenly on top of the crème fraîche.
- Arrange the sliced onions, zucchini, and bell pepper over the cheese, then sprinkle with thyme and black pepper.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the vegetables are tender.
- Remove from the oven, let it cool for a couple of minutes, then slice and serve warm.
