Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Crème fraîche - 100 grams
  • Goat cheese - 100 grams, crumbled
  • Onion - 1 medium, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Bell pepper - 1 small, thinly sliced
  • Thyme - 1 teaspoon, fresh or dried
  • Black pepper - to taste

Steps

  1. Preheat your oven to 250°C (482°F).
  2. In a mixing bowl, combine the flour, water, olive oil, and salt to form a smooth dough. Knead for a few minutes until elastic, then let it rest for 10 minutes.
  3. Roll out the dough on a lightly floured surface into a thin rectangle or circle, about 3 mm thick.
  4. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  5. Spread the crème fraîche evenly over the surface of the dough, leaving a small border around the edges.
  6. Sprinkle the crumbled goat cheese evenly on top of the crème fraîche.
  7. Arrange the sliced onions, zucchini, and bell pepper over the cheese, then sprinkle with thyme and black pepper.
  8. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the vegetables are tender.
  9. Remove from the oven, let it cool for a couple of minutes, then slice and serve warm.
