Ingredients
- All-purpose flour - 150g
- Water - 75ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Raw cashews - 100g
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion - 1 medium, thinly sliced
- Zucchini - 1 small, thinly sliced
- Bell pepper - 1/2, thinly sliced
- Black pepper - to taste
- Fresh thyme - 1 teaspoon, chopped
- Balsamic vinegar - 1 tablespoon
Steps
- In a mixing bowl, combine the flour, water, olive oil, and salt. Knead the dough until smooth, then wrap it in plastic wrap and let it rest for 15 minutes.
- While the dough is resting, soak the cashews in hot water for 15 minutes, then drain and blend them with nutritional yeast, garlic powder, and a pinch of salt until smooth and creamy.
- In a skillet, heat a little olive oil over medium heat and sauté the sliced onions until caramelized, about 10 minutes. Add the zucchini and bell pepper, cooking for an additional 5 minutes until slightly tender.
- Preheat the oven to 220°C (428°F). Roll out the rested dough on a floured surface into a rectangle about 5mm thick.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper. Spread the cashew cream evenly over the dough, leaving a small border around the edges.
- Top with the sautéed onions, zucchini, and bell pepper. Season with black pepper, fresh thyme, and drizzle with balsamic vinegar.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let cool slightly before slicing.
