Ingredients

  • All-purpose flour - 150g
  • Water - 75ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Raw cashews - 100g
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion - 1 medium, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Bell pepper - 1/2, thinly sliced
  • Black pepper - to taste
  • Fresh thyme - 1 teaspoon, chopped
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a mixing bowl, combine the flour, water, olive oil, and salt. Knead the dough until smooth, then wrap it in plastic wrap and let it rest for 15 minutes.
  2. While the dough is resting, soak the cashews in hot water for 15 minutes, then drain and blend them with nutritional yeast, garlic powder, and a pinch of salt until smooth and creamy.
  3. In a skillet, heat a little olive oil over medium heat and sauté the sliced onions until caramelized, about 10 minutes. Add the zucchini and bell pepper, cooking for an additional 5 minutes until slightly tender.
  4. Preheat the oven to 220°C (428°F). Roll out the rested dough on a floured surface into a rectangle about 5mm thick.
  5. Transfer the rolled-out dough to a baking sheet lined with parchment paper. Spread the cashew cream evenly over the dough, leaving a small border around the edges.
  6. Top with the sautéed onions, zucchini, and bell pepper. Season with black pepper, fresh thyme, and drizzle with balsamic vinegar.
  7. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let cool slightly before slicing.
