Ingredients

  • Whole wheat flour - 100g
  • Water - 70ml
  • Olive oil - 1 tablespoon
  • Low-fat crème fraîche - 100g
  • Onion - 1 small, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Bell pepper - 1/2, thinly sliced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mix the whole wheat flour, water, olive oil, and a pinch of salt to form a dough. Knead for a few minutes until smooth.
  3. Roll the dough out on a lightly floured surface to a thin rectangle, about 25x30 cm.
  4. Spread the low-fat crème fraîche evenly over the rolled-out dough, leaving a small border around the edges.
  5. Arrange the sliced onion, zucchini, and bell pepper on top of the crème fraîche.
  6. Sprinkle fresh thyme, salt, and black pepper over the vegetables.
  7. Transfer the flammekueche to a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  9. Remove from the oven, slice, and serve warm.
