Steps

  1. Preheat your oven to 180°C (350°F) and grease two financier molds or a small rectangular baking dish.
  2. In a mixing bowl, combine almond flour, baking powder, and salt.
  3. In another bowl, whisk the egg whites until slightly frothy.
  4. Add honey, melted coconut oil, and vanilla extract to the egg whites, and mix until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Pour the batter evenly into the prepared molds.
  7. Bake in the preheated oven for about 15-20 minutes or until the edges are golden and a toothpick inserted comes out clean.
