Ingredients

  • Almond flour - 50 grams
  • All-purpose flour - 20 grams
  • Powdered sugar - 40 grams
  • Unsalted butter - 50 grams
  • Egg whites - 2 large (about 60 grams)
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and prepare a financier mold or mini loaf pans by greasing them lightly.
  2. In a small saucepan, melt the unsalted butter over low heat until it turns a light brown color and has a nutty aroma, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. In a mixing bowl, whisk together the almond flour, all-purpose flour, powdered sugar, and salt until well combined.
  4. In another bowl, whisk the egg whites until frothy but not stiff, then add the melted butter and vanilla extract, mixing well.
  5. Pour the wet ingredients into the dry ingredients and fold gently until just combined, being careful not to overmix.
  6. Spoon the batter into the prepared molds, filling them about 3/4 full.
  7. Bake in the preheated oven for about 15-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Let the financiers cool in the molds for 5 minutes before transferring them to a wire rack to cool completely.
