Ingredients
- Almond flour - 50 grams
- All-purpose flour - 20 grams
- Powdered sugar - 40 grams
- Unsalted butter - 50 grams
- Egg whites - 2 large (about 60 grams)
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F) and prepare a financier mold or mini loaf pans by greasing them lightly.
- In a small saucepan, melt the unsalted butter over low heat until it turns a light brown color and has a nutty aroma, about 5-7 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the almond flour, all-purpose flour, powdered sugar, and salt until well combined.
- In another bowl, whisk the egg whites until frothy but not stiff, then add the melted butter and vanilla extract, mixing well.
- Pour the wet ingredients into the dry ingredients and fold gently until just combined, being careful not to overmix.
- Spoon the batter into the prepared molds, filling them about 3/4 full.
- Bake in the preheated oven for about 15-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Let the financiers cool in the molds for 5 minutes before transferring them to a wire rack to cool completely.
