Ingredients

  • Fennel bulbs - 2 medium (about 300g)
  • Heavy cream - 100 ml
  • Grated Gruyère cheese - 75 g
  • Parmesan cheese - 30 g
  • Butter - 20 g
  • Garlic - 1 clove, minced
  • Thyme - 1 tsp, fresh or dried
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Trim the fennel bulbs, remove the outer layers if they are tough, and slice them thinly.
  3. In a skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the sliced fennel to the skillet, season with salt, black pepper, and thyme. Sauté for 5-7 minutes until slightly softened.
  5. In a bowl, combine the heavy cream, grated Gruyère cheese, Parmesan cheese, and a pinch of nutmeg. Stir well to combine.
  6. In a baking dish, layer the sautéed fennel evenly, then pour the cheese and cream mixture over the top.
  7. Sprinkle a little extra Gruyère cheese on top for a crustier finish.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
