Ingredients
- Fennel bulbs - 2 medium (about 300g)
- Heavy cream - 100 ml
- Grated Gruyère cheese - 75 g
- Parmesan cheese - 30 g
- Butter - 20 g
- Garlic - 1 clove, minced
- Thyme - 1 tsp, fresh or dried
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- Trim the fennel bulbs, remove the outer layers if they are tough, and slice them thinly.
- In a skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the sliced fennel to the skillet, season with salt, black pepper, and thyme. Sauté for 5-7 minutes until slightly softened.
- In a bowl, combine the heavy cream, grated Gruyère cheese, Parmesan cheese, and a pinch of nutmeg. Stir well to combine.
- In a baking dish, layer the sautéed fennel evenly, then pour the cheese and cream mixture over the top.
- Sprinkle a little extra Gruyère cheese on top for a crustier finish.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
