- Prunes - 100 g (pitted and chopped)
- Baking powder - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish (about 20 cm x 20 cm).
- In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes to thicken.
- In a large bowl, whisk together the almond milk, brown sugar, vanilla extract, and the prepared flax egg until well combined.
- In another bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until smooth.
- Fold in the chopped prunes until evenly distributed.
- Pour the batter into the greased baking dish and spread it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before slicing and serving warm.
