Ingredients

  • Dried white beans - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Smoked paprika - 1 teaspoon
  • Liquid smoke - 1/2 teaspoon
  • Vegetable broth - 500 milliliters
  • Tomato paste - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse and soak the dried white beans in water for at least 8 hours, or overnight.
  2. Drain and rinse the beans, then place them in a pot with fresh water. Bring to a boil, then reduce heat and simmer for about 30 minutes or until tender. Drain and set aside.
  3. In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
  4. Add the minced garlic, smoked paprika, and liquid smoke to the skillet, stirring for an additional minute until fragrant.
  5. Stir in the tomato paste, vegetable broth, maple syrup, thyme, bay leaf, salt, and pepper. Bring the mixture to a gentle simmer.
  6. Add the cooked beans to the skillet, stirring to combine, and let simmer for about 30 minutes to allow flavors to meld, stirring occasionally.
  7. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
