- Celery - 1 stalk, diced
- Vegetable broth - 250 ml
- Tomato paste - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a medium pot over medium heat.
- Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and diced smoked tofu, cooking for an additional 3 minutes.
- Add the drained cannellini beans, vegetable broth, tomato paste, Dijon mustard, thyme, bay leaf, salt, and black pepper.
