  • Smoked tofu - 100 grams, diced

  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 250 ml
  • Tomato paste - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic and diced smoked tofu, cooking for an additional 3 minutes.
  4. Add the drained cannellini beans, vegetable broth, tomato paste, Dijon mustard, thyme, bay leaf, salt, and black pepper.
  5. Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally.
  6. Remove the bay leaf and adjust seasoning if necessary.
