- Vegetable broth - 500 ml
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Olive oil - 1 tablespoon

Steps
- Soak the dried white beans in water for at least 8 hours or overnight, then drain and rinse.
- In a large pot, heat the olive oil over medium heat and add the bacon lardons. Cook until crispy, about 5-7 minutes.
- Add the diced onion and carrot to the pot, cooking for another 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the soaked beans, vegetable broth, thyme, and bay leaf to the pot. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 1 hour, or until the beans are tender.
- Remove the bay leaf, season with salt and pepper to taste, and serve warm.
