  • Bacon lardons - 100 grams
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Soak the dried white beans in water for at least 8 hours or overnight, then drain and rinse.
  2. In a large pot, heat the olive oil over medium heat and add the bacon lardons. Cook until crispy, about 5-7 minutes.
  3. Add the diced onion and carrot to the pot, cooking for another 5 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the soaked beans, vegetable broth, thyme, and bay leaf to the pot. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 1 hour, or until the beans are tender.
  7. Remove the bay leaf, season with salt and pepper to taste, and serve warm.
