Ingredients

  • Endives - 4 medium-sized
  • Ham - 100 grams, thinly sliced
  • Butter - 20 grams
  • All-purpose flour - 20 grams
  • Milk - 250 milliliters
  • Gruyère cheese - 50 grams, grated
  • Nutmeg - a pinch
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Trim the end of the endives and remove any damaged outer leaves. Blanch the endives in boiling salted water for about 10 minutes until slightly tender. Drain and let cool.
  3. Wrap each endive with a slice of ham and place them in a baking dish.
  4. In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux and cook for 1-2 minutes until lightly golden.
  5. Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the sauce thickens, about 5 minutes.
  6. Add a pinch of nutmeg, salt, and pepper to the sauce. Stir in half of the grated Gruyère cheese until melted and combined.
  7. Pour the béchamel sauce over the wrapped endives in the baking dish. Sprinkle the remaining Gruyère cheese on top.
  8. Bake in the preheated oven for 20 minutes or until the top is golden and bubbly.
  9. Remove from the oven and let cool for a few minutes before serving.
