- Endives - 4 medium-sized
- Ham - 100 grams, thinly sliced
- Butter - 20 grams
- All-purpose flour - 20 grams
- Milk - 250 milliliters
- Gruyère cheese - 50 grams, grated
- Nutmeg - a pinch
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Trim the end of the endives and remove any damaged outer leaves. Blanch the endives in boiling salted water for about 10 minutes until slightly tender. Drain and let cool.
- Wrap each endive with a slice of ham and place them in a baking dish.
- In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux and cook for 1-2 minutes until lightly golden.
- Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the sauce thickens, about 5 minutes.
- Add a pinch of nutmeg, salt, and pepper to the sauce. Stir in half of the grated Gruyère cheese until melted and combined.
- Pour the béchamel sauce over the wrapped endives in the baking dish. Sprinkle the remaining Gruyère cheese on top.
- Bake in the preheated oven for 20 minutes or until the top is golden and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
