Ingredients

  • Endives - 4 medium
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • All-purpose flour - 2 tablespoons
  • Unsweetened almond milk - 250 ml
  • Nutritional yeast - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Breadcrumbs - 4 tablespoons
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Trim the ends of the endives and remove any damaged outer leaves. Cut them in half lengthwise and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the flour and cook for another 2 minutes to form a roux, stirring constantly.
  6. Gradually whisk in the almond milk, ensuring there are no lumps. Cook until the sauce thickens, about 3-4 minutes.
  7. Add the nutritional yeast, Dijon mustard, salt, and black pepper to the sauce, stirring to combine.
  8. In a baking dish, arrange the endive halves cut side up. Pour the sauce over the endives, ensuring they are well-coated.
  9. Sprinkle the breadcrumbs evenly on top of the sauce.
  10. Bake in the preheated oven for 25-30 minutes, or until the breadcrumbs are golden brown.
  11. Remove from the oven and let cool slightly before garnishing with fresh parsley. Serve warm.
