- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- All-purpose flour - 2 tablespoons
- Unsweetened almond milk - 250 ml
- Nutritional yeast - 2 tablespoons
- Dijon mustard - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 4 tablespoons
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Trim the ends of the endives and remove any damaged outer leaves. Cut them in half lengthwise and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the flour and cook for another 2 minutes to form a roux, stirring constantly.
- Gradually whisk in the almond milk, ensuring there are no lumps. Cook until the sauce thickens, about 3-4 minutes.
- Add the nutritional yeast, Dijon mustard, salt, and black pepper to the sauce, stirring to combine.
- In a baking dish, arrange the endive halves cut side up. Pour the sauce over the endives, ensuring they are well-coated.
- Sprinkle the breadcrumbs evenly on top of the sauce.
- Bake in the preheated oven for 25-30 minutes, or until the breadcrumbs are golden brown.
- Remove from the oven and let cool slightly before garnishing with fresh parsley. Serve warm.
