Ingredients

  • Eggplant - 1 medium (about 300g)
  • Almond flour - 50g
  • Parmesan cheese (grated) - 30g
  • Mozzarella cheese (shredded) - 150g
  • Marinara sauce (sugar-free) - 200g
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1/2 inch (1.25 cm) thick rounds, sprinkle with salt, and let them sit for about 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a kitchen towel.
  4. In a shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper.
  5. In another bowl, beat the egg.
  6. Dip each eggplant slice into the beaten egg, then dredge in the almond flour mixture, ensuring they are well coated.
  7. Heat olive oil in a large skillet over medium heat. Fry the coated eggplant slices for about 3-4 minutes on each side until golden brown. Work in batches if necessary.
  8. In a baking dish, spread a thin layer of marinara sauce on the bottom, followed by a layer of fried eggplant slices, and then a layer of shredded mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a layer of mozzarella on top.
  9. Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven and let it cool for a few minutes before garnishing with fresh basil. Serve warm.
