Ingredients
- Eggplant - 1 medium (about 300g)
- Almond flour - 50g
- Parmesan cheese (grated) - 30g
- Mozzarella cheese (shredded) - 150g
- Marinara sauce (sugar-free) - 200g
- Egg - 1 large
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1/2 inch (1.25 cm) thick rounds, sprinkle with salt, and let them sit for about 15 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with a kitchen towel.
- In a shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper.
- In another bowl, beat the egg.
- Dip each eggplant slice into the beaten egg, then dredge in the almond flour mixture, ensuring they are well coated.
- Heat olive oil in a large skillet over medium heat. Fry the coated eggplant slices for about 3-4 minutes on each side until golden brown. Work in batches if necessary.
- In a baking dish, spread a thin layer of marinara sauce on the bottom, followed by a layer of fried eggplant slices, and then a layer of shredded mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a layer of mozzarella on top.
- Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh basil. Serve warm.
