Ingredients

  • Duck leg confit - 2 pieces
  • Brioche buns - 2
  • Fresh arugula - 50 grams
  • Cherry preserves - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Onion - 1 small, thinly sliced

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Remove the duck leg confit from its packaging and place it in a baking dish. Bake in the preheated oven for about 15-20 minutes or until heated through and the skin is crispy.
  3. While the duck is heating, heat olive oil in a skillet over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic to the skillet and cook for an additional minute, then stir in the cherry preserves and red wine vinegar. Cook until the mixture thickens slightly, about 3-4 minutes.
  5. Slice the brioche buns in half and toast them lightly on a skillet or in the oven.
  6. Once the duck is ready, remove it from the oven and carefully shred the meat off the bone, discarding the bone and skin (if desired).
  7. To assemble the burgers, place a generous amount of shredded duck confit on the bottom half of each toasted brioche bun. Top with sautéed onions and cherry reduction, followed by a handful of fresh arugula.
  8. Place the top half of the bun on each burger and serve immediately.
