- Beef chuck - 300 grams
- Carrots - 2 medium, sliced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Tomato paste - 1 tablespoon
- Red wine - 150 ml (preferably a dry variety)
- Beef broth - 200 ml
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- 1. Cut the beef chuck into 2-inch pieces and season with salt and pepper.
- 2. In a large Dutch oven, heat olive oil over medium-high heat. Add the beef pieces and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- 3. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- 4. Stir in the tomato paste and cook for another 2 minutes, then return the beef to the pot.
- 5. Pour in the red wine and beef broth, then add thyme and bay leaf. Bring to a simmer.
- 6. Cover the pot and reduce heat to low. Let it simmer for about 1.5 hours, stirring occasionally, until the beef is tender.
- 7. Taste and adjust seasoning with salt and pepper as needed.
- 8. Serve hot, garnished with fresh parsley.
