Ingredients

  • Beef chuck - 300 grams
  • Carrots - 2 medium, sliced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Tomato paste - 1 tablespoon
  • Red wine - 150 ml (preferably a dry variety)
  • Beef broth - 200 ml
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. 1. Cut the beef chuck into 2-inch pieces and season with salt and pepper.
  2. 2. In a large Dutch oven, heat olive oil over medium-high heat. Add the beef pieces and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  3. 3. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
  4. 4. Stir in the tomato paste and cook for another 2 minutes, then return the beef to the pot.
  5. 5. Pour in the red wine and beef broth, then add thyme and bay leaf. Bring to a simmer.
  6. 6. Cover the pot and reduce heat to low. Let it simmer for about 1.5 hours, stirring occasionally, until the beef is tender.
  7. 7. Taste and adjust seasoning with salt and pepper as needed.
  8. 8. Serve hot, garnished with fresh parsley.
