Dacquoise
Dacquoise is a light and airy French dessert made with layers of nut meringue, complemented by a rich filling. This elegant treat offers a delightful combination of textures and flavors, perfect for a special occasion.

Ingredients
- Almond flour - 50g
- Powdered sugar - 50g
- Egg whites - 2 large
- Granulated sugar - 30g
- Heavy cream - 100ml
- Dark chocolate (70% cocoa) - 30g
- Vanilla extract - 1 tsp
- Fresh berries (for garnish) - 50g
Steps
- Preheat the oven to 150°C (300°F) and line two baking sheets with parchment paper.
- In a bowl, mix almond flour and powdered sugar together until well combined.
- In a separate bowl, whip the egg whites with an electric mixer until soft peaks form, then gradually add granulated sugar and continue to whip until stiff peaks form.
- Gently fold the almond flour mixture into the whipped egg whites until fully incorporated.
- Transfer the meringue mixture into a piping bag and pipe two 10cm circles on the prepared baking sheets.
- Bake in the preheated oven for about 30 minutes, or until the meringue is crisp and easily lifts off the parchment paper. Let cool completely.
- While the meringues cool, melt the dark chocolate in a microwave or double boiler. Allow it to cool slightly.
- In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
- Gently fold the melted chocolate into the whipped cream until evenly combined.
- Once the meringues are cool, place one meringue on a serving plate, spread half of the chocolate cream mixture on top, and then place the second meringue on top.
- Spread the remaining chocolate cream on top of the second meringue and garnish with fresh berries.
- Serve immediately and enjoy your homemade Dacquoise!
