Ingredients

  • apples - 3 medium (about 450g)
  • maple syrup - 2 tablespoons (30ml)
  • cinnamon - 1 teaspoon
  • lemon juice - 1 tablespoon (15ml)
  • vanilla extract - 1 teaspoon
  • all-purpose flour - 100g
  • coconut oil - 50g, melted
  • plant-based milk - 50ml
  • brown sugar - 1 tablespoon (15g)
  • salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel, core, and slice the apples into thin wedges, then place them in a mixing bowl.
  3. Add maple syrup, cinnamon, lemon juice, and vanilla extract to the apples and toss until well coated.
  4. In a separate bowl, combine the flour, melted coconut oil, plant-based milk, brown sugar, and salt to form a dough.
  5. Roll out the dough on a lightly floured surface to about 0.5 cm thick.
  6. Place half of the dough into a lightly greased baking dish, pressing it down to form a base.
  7. Layer the apple mixture evenly on top of the dough base.
  8. Cover the apples with the remaining dough, sealing the edges to create a crust.
  9. Make small slits on the top crust to allow steam to escape.
  10. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  11. Remove from the oven and let it cool for a few minutes before serving.
