- Puff pastry sheets - 2 (approx. 250 grams total)
- Fresh parsley, chopped - 2 tablespoons
- Fresh dill, chopped - 1 tablespoon
- Lemon zest - 1 teaspoon
- Garlic, minced - 1 clove
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg (for egg wash) - 1
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the chopped parsley, dill, lemon zest, minced garlic, salt, and black pepper.
- Place the white fish fillets on a clean surface and evenly spread the herb mixture on top of each fillet.
- Roll out the puff pastry sheets on a floured surface and cut them into squares large enough to fold over the fish.
- Place one seasoned fish fillet in the center of each puff pastry square.
- Fold the pastry over the fish, sealing the edges firmly, and place them seam-side down on a baking sheet lined with parchment paper.
- Beat the egg and brush the egg wash over the top of each pastry to give it a golden color when baked.
- Bake in the preheated oven for 20 minutes, or until the pastry is golden brown and crisp.
- While the fish is baking, mix the olive oil and lemon juice in a small bowl to create a simple dipping sauce.
