Ingredients

  • White fish fillets (e.g., cod or haddock) - 200 grams
  • Puff pastry sheets - 2 (approx. 250 grams total)
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh dill, chopped - 1 tablespoon
  • Lemon zest - 1 teaspoon
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg (for egg wash) - 1
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the chopped parsley, dill, lemon zest, minced garlic, salt, and black pepper.
  3. Place the white fish fillets on a clean surface and evenly spread the herb mixture on top of each fillet.
  4. Roll out the puff pastry sheets on a floured surface and cut them into squares large enough to fold over the fish.
  5. Place one seasoned fish fillet in the center of each puff pastry square.
  6. Fold the pastry over the fish, sealing the edges firmly, and place them seam-side down on a baking sheet lined with parchment paper.
  7. Beat the egg and brush the egg wash over the top of each pastry to give it a golden color when baked.
  8. Bake in the preheated oven for 20 minutes, or until the pastry is golden brown and crisp.
  9. While the fish is baking, mix the olive oil and lemon juice in a small bowl to create a simple dipping sauce.
  10. Serve the Croustillant de Poisson hot, accompanied by the dipping sauce.
