- Puff pastry - 250 grams
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Carrot - 100 grams, grated
- Shallot - 1, finely chopped
- Garlic - 1 clove, minced
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Egg - 1, for egg wash
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add shallots and garlic, sauté until fragrant.
- Add diced zucchini, red bell pepper, and grated carrot to the skillet. Season with salt, pepper, and thyme. Cook for about 5-7 minutes until the vegetables are slightly softened. Remove from heat and let cool.
- Roll out the puff pastry on a floured surface to a thickness of about 3 mm. Cut into 2 squares, approximately 15 cm each.
- Place a spoonful of the vegetable mixture in the center of each pastry square. Sprinkle with grated Parmesan cheese if using.
- Fold the pastry over to create a triangle, sealing the edges with a fork. Brush the top with beaten egg.
- Place the pastries on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and crispy.
- Remove from the oven and let them cool slightly before serving.
