Ingredients

  • Puff pastry - 250 grams
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Carrot - 100 grams, grated
  • Shallot - 1, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1, for egg wash
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat. Add shallots and garlic, sauté until fragrant.
  3. Add diced zucchini, red bell pepper, and grated carrot to the skillet. Season with salt, pepper, and thyme. Cook for about 5-7 minutes until the vegetables are slightly softened. Remove from heat and let cool.
  4. Roll out the puff pastry on a floured surface to a thickness of about 3 mm. Cut into 2 squares, approximately 15 cm each.
  5. Place a spoonful of the vegetable mixture in the center of each pastry square. Sprinkle with grated Parmesan cheese if using.
  6. Fold the pastry over to create a triangle, sealing the edges with a fork. Brush the top with beaten egg.
  7. Place the pastries on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and crispy.
  8. Remove from the oven and let them cool slightly before serving.
