- Puff pastry - 250 grams
- Zucchini - 100 grams, diced
- Carrot - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Mushrooms - 100 grams, diced
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons
- Plant-based milk - 2 tablespoons (for brushing)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced zucchini, carrot, red bell pepper, and mushrooms to the skillet, cooking for about 5-7 minutes until softened.
- Season the vegetable mixture with dried thyme, salt, and black pepper, then stir in the nutritional yeast. Remove from heat and let cool slightly.
- Roll out the puff pastry on a floured surface and cut into two squares (approximately 20 cm each).
- Place half of the vegetable mixture in the center of each pastry square, leaving a border around the edges.
- Fold the pastry over to create a triangle shape, sealing the edges by pressing with a fork.
- Brush the top of each pastry with plant-based milk for a golden finish.
- Place the pastries on a baking tray lined with parchment paper and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
