  • Puff pastry - 250 grams
  • Zucchini - 100 grams, diced
  • Carrot - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Mushrooms - 100 grams, diced
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Plant-based milk - 2 tablespoons (for brushing)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced zucchini, carrot, red bell pepper, and mushrooms to the skillet, cooking for about 5-7 minutes until softened.
  4. Season the vegetable mixture with dried thyme, salt, and black pepper, then stir in the nutritional yeast. Remove from heat and let cool slightly.
  5. Roll out the puff pastry on a floured surface and cut into two squares (approximately 20 cm each).
  6. Place half of the vegetable mixture in the center of each pastry square, leaving a border around the edges.
  7. Fold the pastry over to create a triangle shape, sealing the edges by pressing with a fork.
  8. Brush the top of each pastry with plant-based milk for a golden finish.
  9. Place the pastries on a baking tray lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  10. Remove from the oven and let cool for a few minutes before serving.
