- Goat cheese - 100 grams
- Gruyère cheese - 50 grams, grated
- Fresh thyme - 1 tablespoon, chopped
- Egg - 1, beaten
- Olive oil - 1 tablespoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Mixed salad greens - 100 grams
- Cherry tomatoes - 100 grams, halved
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to about 3 mm thick and cut into two rectangles.
- In a bowl, mix the goat cheese, grated Gruyère, chopped thyme, salt, and black pepper until well combined.
- Spread the cheese mixture evenly over one side of each pastry rectangle, leaving a small border around the edges.
- Fold the pastry over to create a pocket, sealing the edges with a fork or by crimping them with your fingers.
- Brush the tops of the pastry pockets with the beaten egg for a golden finish.
- Place the filled pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden and puffed.
- While the pastries are baking, prepare the salad by tossing the mixed greens and halved cherry tomatoes with olive oil and balsamic vinegar.
- Once the pastries are golden brown, remove them from the oven and let them cool for a few minutes before serving.
- Serve the Croustillant de Fromage with the fresh salad on the side.
