- Almond flour - 50 grams
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Fresh chives - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Sea salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons (for frying)
- Avocado - 1 medium, mashed
- Olive oil - 1 tablespoon
- Lemon zest - 1 teaspoon
Steps
- In a mixing bowl, combine the fresh crab meat, almond flour, egg, parsley, chives, minced garlic, lemon juice, sea salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Form the mixture into small patties, about 5 cm in diameter, and place them on a plate.
- Heat coconut oil in a skillet over medium heat. Once hot, carefully place the crab patties in the skillet, cooking for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, prepare the avocado dip by mixing the mashed avocado, olive oil, lemon zest, and a pinch of salt in a small bowl until smooth.
- Once the crab cakes are cooked, remove them from the skillet and let them drain on a paper towel for a minute.
- Serve the Croustillant de Crabe warm with a generous dollop of the avocado dip on the side.
