Ingredients

  • Green cabbage - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, grated
  • Mushrooms - 100 grams, finely chopped
  • Parmesan cheese - 50 grams, grated
  • Breadcrumbs - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Remove the outer leaves of the cabbage and set aside. Boil the remaining cabbage in salted water for 5-7 minutes until slightly tender. Drain and cool.
  3. In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent, about 3-4 minutes.
  4. Add the grated carrot and chopped mushrooms to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
  5. Stir in the breadcrumbs, Parmesan cheese, chopped parsley, salt, pepper, and nutmeg. Mix well until combined.
  6. Take a cabbage leaf and place 1-2 tablespoons of the filling at the base of the leaf. Roll it up tightly and tuck in the sides. Repeat with remaining leaves and filling.
  7. Place the stuffed cabbage rolls in a baking dish. Drizzle with a little more olive oil and sprinkle with additional breadcrumbs and Parmesan if desired.
  8. Bake in the preheated oven for 25-30 minutes until golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes before serving.
