- Green cabbage - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Carrot - 1 medium, grated
- Mushrooms - 100 grams, finely chopped
- Parmesan cheese - 50 grams, grated
- Breadcrumbs - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- Remove the outer leaves of the cabbage and set aside. Boil the remaining cabbage in salted water for 5-7 minutes until slightly tender. Drain and cool.
- In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the grated carrot and chopped mushrooms to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
- Stir in the breadcrumbs, Parmesan cheese, chopped parsley, salt, pepper, and nutmeg. Mix well until combined.
- Take a cabbage leaf and place 1-2 tablespoons of the filling at the base of the leaf. Roll it up tightly and tuck in the sides. Repeat with remaining leaves and filling.
- Place the stuffed cabbage rolls in a baking dish. Drizzle with a little more olive oil and sprinkle with additional breadcrumbs and Parmesan if desired.
- Bake in the preheated oven for 25-30 minutes until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
