Ingredients

  • Puff pastry - 200 grams
  • Mushrooms (button or cremini) - 200 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegan cream cheese - 50 grams
  • Plant-based milk - 2 tablespoons (for brushing)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and chopped mushrooms to the skillet, cooking until the mushrooms release their moisture and become tender, about 6-7 minutes.
  4. Stir in the fresh parsley, thyme, salt, and black pepper, and cook for another 2 minutes. Remove from heat and let the mixture cool slightly.
  5. Once cooled, mix in the vegan cream cheese until well combined.
  6. Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut it into two equal rectangles.
  7. Place half of the mushroom mixture on one side of each pastry rectangle, leaving a border around the edges.
  8. Fold the pastry over to enclose the filling, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
  9. Brush the top of each pastry with plant-based milk to give it a golden color when baked.
  10. Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown and crispy.
  11. Remove from the oven and let cool for a few minutes before serving.
