- Puff pastry - 200 grams
- Mushrooms (button or cremini) - 200 grams, finely chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegan cream cheese - 50 grams
- Plant-based milk - 2 tablespoons (for brushing)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and chopped mushrooms to the skillet, cooking until the mushrooms release their moisture and become tender, about 6-7 minutes.
- Stir in the fresh parsley, thyme, salt, and black pepper, and cook for another 2 minutes. Remove from heat and let the mixture cool slightly.
- Once cooled, mix in the vegan cream cheese until well combined.
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut it into two equal rectangles.
- Place half of the mushroom mixture on one side of each pastry rectangle, leaving a border around the edges.
- Fold the pastry over to enclose the filling, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Brush the top of each pastry with plant-based milk to give it a golden color when baked.
- Place the pastries on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
