Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the goat cheese, fresh spinach, chopped thyme, salt, and black pepper until well mixed.
- Lay one sheet of phyllo pastry on a clean surface and brush it lightly with olive oil.
- Place another sheet of phyllo on top and brush it with olive oil again.
- Spoon a portion of the goat cheese mixture onto one end of the phyllo, leaving a small border around the edges.
- Fold the sides of the phyllo over the filling and roll it up tightly to form a log shape.
- Repeat the process with the remaining phyllo sheets and filling to create two rolls.
- Place the rolls seam-side down on a baking sheet lined with parchment paper.
- Beat the egg and brush it over the tops of the phyllo rolls for a golden finish.
