  • Phyllo pastry - 4 sheets

  • Fresh spinach - 50 grams
  • Fresh thyme - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1, for egg wash

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the goat cheese, fresh spinach, chopped thyme, salt, and black pepper until well mixed.
  3. Lay one sheet of phyllo pastry on a clean surface and brush it lightly with olive oil.
  4. Place another sheet of phyllo on top and brush it with olive oil again.
  5. Spoon a portion of the goat cheese mixture onto one end of the phyllo, leaving a small border around the edges.
  6. Fold the sides of the phyllo over the filling and roll it up tightly to form a log shape.
  7. Repeat the process with the remaining phyllo sheets and filling to create two rolls.
  8. Place the rolls seam-side down on a baking sheet lined with parchment paper.
  9. Beat the egg and brush it over the tops of the phyllo rolls for a golden finish.
  10. Bake in the preheated oven for 15-20 minutes or until the pastry is crispy and golden brown.
  11. Remove from the oven and let cool slightly before slicing and serving.
