- Cumin - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 60 milliliters
- Olive oil - for frying
Steps
- In a large mixing bowl, combine the grated carrots, chickpea flour, cornstarch, chopped parsley, minced garlic, cumin, paprika, salt, and black pepper.
- Gradually add water to the mixture, stirring until a thick batter forms. Adjust the water if necessary to achieve a workable consistency.
- Heat a non-stick frying pan over medium heat and add enough olive oil to coat the bottom.
- Once the oil is hot, drop spoonfuls of the carrot mixture into the pan, flattening them slightly to form small fritters.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the pan and place on a paper towel to absorb excess oil.
