  • Cumin - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 60 milliliters
  • Olive oil - for frying

Steps

  1. In a large mixing bowl, combine the grated carrots, chickpea flour, cornstarch, chopped parsley, minced garlic, cumin, paprika, salt, and black pepper.
  2. Gradually add water to the mixture, stirring until a thick batter forms. Adjust the water if necessary to achieve a workable consistency.
  3. Heat a non-stick frying pan over medium heat and add enough olive oil to coat the bottom.
  4. Once the oil is hot, drop spoonfuls of the carrot mixture into the pan, flattening them slightly to form small fritters.
  5. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the pan and place on a paper towel to absorb excess oil.
