Ingredients
- Duck breasts - 2 pieces (200g each)
- Paleo-friendly pastry (almond flour) - 100g
- Ghee or coconut oil - 30g
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1, beaten (for egg wash)
- Vegetable broth - 100ml
Steps
- Preheat the oven to 200°C (400°F).
- Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat.
- Season the duck breasts with salt, black pepper, and minced garlic on both sides.
- Heat ghee or coconut oil in a skillet over medium heat. Place the duck breasts skin-side down and sear for 5-7 minutes until the skin is crispy.
- Flip the duck breasts and sear the other side for another 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, mix almond flour, chopped thyme, and a pinch of salt. Gradually add melted ghee or coconut oil until the mixture resembles a dough.
- Roll out the almond flour mixture between two sheets of parchment paper to about 0.5 cm thickness.
- Cut the rolled dough into rectangles large enough to wrap around each duck breast.
- Wrap each duck breast in the pastry, sealing the edges well. Brush the top with the beaten egg.
- Place the wrapped duck breasts on a baking sheet lined with parchment paper. Pour vegetable broth into the baking sheet to keep the dish moist.
- Bake in the preheated oven for 25-30 minutes until the pastry is golden and crispy.
- Remove from the oven, let rest for 5 minutes, then slice and serve.
