Ingredients

  • Duck breasts - 2 pieces (200g each)
  • Paleo-friendly pastry (almond flour) - 100g
  • Ghee or coconut oil - 30g
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1, beaten (for egg wash)
  • Vegetable broth - 100ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat.
  3. Season the duck breasts with salt, black pepper, and minced garlic on both sides.
  4. Heat ghee or coconut oil in a skillet over medium heat. Place the duck breasts skin-side down and sear for 5-7 minutes until the skin is crispy.
  5. Flip the duck breasts and sear the other side for another 2-3 minutes. Remove from heat and let cool slightly.
  6. In a bowl, mix almond flour, chopped thyme, and a pinch of salt. Gradually add melted ghee or coconut oil until the mixture resembles a dough.
  7. Roll out the almond flour mixture between two sheets of parchment paper to about 0.5 cm thickness.
  8. Cut the rolled dough into rectangles large enough to wrap around each duck breast.
  9. Wrap each duck breast in the pastry, sealing the edges well. Brush the top with the beaten egg.
  10. Place the wrapped duck breasts on a baking sheet lined with parchment paper. Pour vegetable broth into the baking sheet to keep the dish moist.
  11. Bake in the preheated oven for 25-30 minutes until the pastry is golden and crispy.
  12. Remove from the oven, let rest for 5 minutes, then slice and serve.
